THE - Cupcake Pop!

and so, the first cake pop done wasn't really a success.. i'd come to conclude that not all recipes that is being published and sold in stores are recipe that you could use..

2 days back, i'd voluntarily cut off some sleep to make 2 batches of cupcake pop.. due to the passion for baking & cooking, i had happily sacrificed my sleep..

Hubs and his band or brothers (his motor kakis) had decided to usher in the new year together.. so here's what i baked apart from the chicken curry as their main dish, bread pudding (to thank the canadian for letting me order chicken for the bbq), black pepper sauce and chicken rice for firas's meal..




They looked a lil messy.. but tasted great! I'm glad everyone enjoyed it..

Nonetheless, HAPPY NEW YEAR PPL!!

THE - RJJ

RJJ - Roti John Junior!

heh! this is for the days that i ran outta ideas what to have for dinner/supper..


Roti John

Ingredients:
* Minced beef
* Diced onion
* Pinch of salt
* Pepper
* 3 eggs
* Gardenia French Loaf (the ones sold at the bakery store tends to be a lil tough/chewy)

Methods:
1) Cook the minced beef first. Sauteed the minced beef with a lil oil & the diced onion. Season it with salt & pepper.
2) Once cooked, put aside and work on the egg.
3) In a medium bowl, mixed the egg with a lil salt.
4) Cut the french loaf (the length have gotta be long enuff to dip into bowl of egg), & slit the center of the bread.
5) Heat up pan with a lil oil. Dip the bread with egg and sprinkle the minced beef onto the dipped bread and cooked them on low heat. (If the heat is too high, you may end up with a burnt egg bun!)
6) I would put in sliced cheese in between the loaf.. Its my hubs fave.. cheese..

THE - Must have..

These are like the must have in the kitchen.. The seasonings was bought from NTUC Finest store whereas the Cajun seasoning & cayenne pepper, you could find it easily at supermarkets.. Love the bottles for the NOMU seasonings, it's like a mini grinder, the ones which you gotta turn it and it came out as grounded..



... and I ran outta ideas on what's for dinner today..

THE - Fiffy's Seafood Platter!

An entry via iPhone Blogger apps, doesn't allow you to save, only publish.. My lengthy post got lost when i fell asleep while posting an entry 2 days ago.. T_T

2 days back, as usual, had texted hubs to ask what's for dinner.. His reply this time was "Surprise me.." And so, i'd skipped lunch to shop for grocery at NTUC Parkway Parade instead.. Have i ever mention how i'd loved my trips to the supermarket.. i could spent hours in a supermarket, the big ones of course.. Back in the days when there was carrefour at Suntec, i would go there EVERYDAY.. i would gleam at the entrance of the market.. Oh and to me, supermarket has to be big.. There is no point making a small supermarket, where the alleys are freaking small and there isn't much much variety of products to buy..

Since i stayed in the North but work somewhere near the East, here are my fave's supermarket:
1) Ang Mo Kio - NTUC FairPrice
2) Parkway Parade - NTUC Finest
3) Northpoint - Cold Storage (They have the freshest thawed chicken)
4) Tampines - Giant

Back to "what's for dinner?"

Before he gets sick & tired of chicken, i'd to change the menu.. Seafood is like an expansive food to me.. So the once in a while indulge to Fish & co was what we had look forward to.. Like I'd mention previously, dinner has never been peaceful since we had Firas.. So, i'd decided to try make my very own Seafood platter for dinner!

Fried Calamari:

Ingredients:
* Squid
* 1 cup flour
* 1 egg, beaten
* pepper
* seafood seasoning
* salt

Methods:
1) Clean squid, cut it into rings
2) Mixed flour, pepper, salt & seafood seasoning into a bowl.
3) Dip squid into egg and then to the flour mixture. Deep fry it till golden brown.

Note:  If you are looking for a crunchy fried calamari, i wouldn't recommend this recipe. The taste is alright but it ain't crunchy.. (I am still working on a crispy calamari)

Cajun Prawn:

Ingredients:
* Tiger prawn (It's for family, and the bigger the prawns the tastier it is)
* Cajun Seasoning
* Seafood seasoning

Methods:
1) Clean your prawns, cut the legs leave the shell and the head on.
2) Season it with cajun and seafood seasoning
3) Melt butter on pan (i uses happy call), and cook it for about 5 mins on each side.. (prawns cook real fast, so overcooking the prawns may not be a good idea)


Mussels in Garlic Butter Sauce:

Ingredients:
* 1lb frozen 1/2 shelled mussels (you could use the one with both shell on of course)
* 1/2 block butter, room temperature
* 4 cloves garlic, minced
* 3 teaspoon parsley, chopped (you could use the fresher ones, but i'd prefer the bottled parsley flakes cos i could keep it longer)
* 60ml cooking cream

Methods:
1) Mixed butter, garlic & parsley with a wooden spoon.
2) On a small fire, put the mixture in a medium pot. Once butter has melted put in mussels.
3) Stir well, making sure the mussels is has butter on it. Then add in cream.
4) Cook it on small heat for 15 mins.

PS: Serve it with toasted bread.. The sauce is heavenly YUMS!
Note: I am upset with my Herbs Halibut cos the recipe i had online turns out to be freaking salty.. Let me work on that again before i post.

THE - Fishy-fishy!

I've been losing touch with updating this blog.. I haven't been able to find the time to update since my precious toddler is clinging to me like a koala bear!

So hubz (hubby) was down with fever for 5 days.. and whenever i fall sick, ibu would be making me porridge.. but hubz, he doesn't like porridge (cos it reminds him of being sick, but he does whine alot when he sick!) so i made Fish Soup.. Soup is like the bestest food when you are ill, right? Who doesn't agree to it?

So here's the simplest & fastest fish soup recipe.. (it takes approx. 20 mins to cook)

Sliced Fish Soup!



Ingredients:
* 2 cubes of Ikan Bilis Knorr
* 1 Red Snapper, deboned & sliced
* 1.4L of water
* Iceberg lettuce
* 1 Tomato
* 1 Egg Tofu
* 3 cloves garlic, crushed
* 1 inch Ginger, sliced

Methods:
1. Pour in 1.4L water in a medium pot and put in the ginger & garlic. Bring it to boil.
2. Put in the Knorr cubes and stir till it dissolve.
3. Add in the fish and cook it for abt 5-8 mins then add the rest of ingredients.
4. Let it cook for another 5 mins or till fish is properly cooked. And serve it hot.

PS: You could have it with Bee hoon or rice! Not forgetting Chilli Padi!

THE - Cake Pop!

Long holiday is the bestest!!

So Hari Raya Haji falls on 26-Oct this year and it is Siti's Birthday!! So we had booked a 3D 2N chalet for the celebration AND for the relatives to get together..

As one gets older, you simply ran out of ideas on the perfect gift.. Siti being a fussy woman, i couldn't think of any gift.. The last year gift frm me, a rayban shades, is still unused.. And the Coach handbag which we bought for her a couple of years ago was used less than 10 times! So, i came up with a Cake Pop as my gift to her.. It wasn't cheap, the money and the hardwork put in.. But it was worth it!

Since shifting to my new place, i do not have any baking ware.. No bowls, no spatula, no whisk, no baking trays, NIL, ZERO, KOSONG, ILEK! Purchasing the basics cost me a big hole in my pocket!

It was my fisrt try on making the Cake Pop.. I'm still a newbie.. and there were loads of mistakes made.. So i hope to work on it in the future, when i have the time of course! heh!

THE - Who doesn't love bread pudding??

SERIOUSLY, WHO DOESN'T LOVE BREAD PUDDING????

hehehehe.. I've been craving for bread pudding for a long time.. Since Firas was having his nap i took the opportunity to bake My Bread Pudding (i think this is the basic recipe..)

Bread Pudding:



Ingredients:
* 6 slices bread
* 2 tbsp butter, melted
* 1/2 cup raisins
* 4 eggs, beaten
* 2 cups milk
* 3/4 cup caster sugar
* 1 tsp ground cinnamon
* 1 tsp vanilla extract

Methods:
1. Preheat oven to 175 deg. C
2. Break bread to small pieces into a baking dish. Drizzle melted butter over bread & sprinkle raisins.
3. In medium bowl, combine eggs, milk, sugar, cinnamon & vanilla. Beat till well mixed.
4. Pour over bread & lightly push with fork till bread is covered and soaking up the egg mixture.
5. Bake in the preheated oven for 45 mins.

THE - Carbo-less Dinner

Dining at home is always the bestest place.. I don't have to be embarassed by Firas shouting or dropping the utensils, we get to top up if portion is too small.. I can sit anyway, anyhow i like!

So, we had tried to avoid eating rice, the extra weight gain is increasingly difficult to lose.. Here's something that he like which he doesn't feel guilty having for dinner..

Baked Garlic Parmesan Chicken with Steamed veggies & Aglio Olio..


This had been his favorite for the last couple of days.. We usually omit the pasta.. Just the Chicken & the veggies.. It is filling for dinner and hey!, there is no carbo! =))

THE - Happy Pan

Apart from the occasional request for a bling bling earrings, i had asked for a pan.. Yes i asked my hubs to gimme a pan as a random present.. Who asked their husband for a pan?? I did!! =)

So he surprised me at work by sending a picture for a pan which i had asked a long time ago... THE HAPPY CALL!!! He had ordered it and it was delivered at home..



I got insanely excited at work.. I couldn't work and i was eager to go home and whip something instantly.. =) Here is my first dish from Happy Call..

Cajun Chicken:



Ingredients:
* Chicken Breast
* Cajun Seasoning
* Pepper
* A dash of Cayenne pepper

Methods:
1. Wash the chicken breast & pat dry with paper towel.
2. Season with pepper, cajun seasoning & a dash of cayenne pepper.
3. Heat up the happy call with abt 1 tbsp olive oil and cook the chicken for at 10 mins or till chicken is properly cooked.

PS: Serve it with steamed veggie..

THE - Healthier meatier supper!

Hubs & I gets easily hungry near midnite.. We used to order delivery for McD for late night supper.. BUT, eversince the delivery charges went up to 4 bucks, we had to get a restraining order.. We could get 2 double cheese burger for that price lah!

So, i stumbled across a kinda healthier supper alternative.. Having supper is still sinful lah! Its easy to prepare and easy to cook!

Baked Garlic Parmesan Cheese:



Ingredients:
* 4 Chicken Breast
Bowl A
* Olive oil
* 4 cloves garlic, crushed
Bowl B
* 2 cups breadcrumbs
* a sprinkle of dried thyme (optional)
* 1/2 cup of parmesan cheese (if you like it cheesier, do add more)
* Cajun Seasoning (for flavour)

Methods:
1. Preheat oven at 170 deg. C
2. Dip the chicken breast on Bowl A. Then dip it in Bowl B, making sure it is covered well in the breadcrumbs mixture.
3. Lay it on a lightly grease baking tray. (Not too much oil on the baking tray, otherwise the crumbs would be soggy..
4. Baked it in the preheated oven for 15 mins or till the crumbs turns golden brown.

THE - Jiffy Meals..

I've been absent for darn too long.. Apart from a husband to keep me busy, my little man gave me extra homework everyday, hence the long silence from uploading cooked food..

Being a new mummy is super challenging.. No, i'm not complaining, just loving the new title "MUMMY".. It took me a super long time after giving birth to actually start cooking.. My handsome little man is now 6 months and 14 days old..



He's crawling all over the place and learning to climb.. and his first tooth is spruting out!!! =)))

Enuff said about my handsome little man.. The thought of cooking, after coming home from work and then taking care of an infant, can be really REALLY tiring.. Hence i came up, or should i say stumble and then improvised, with 2 super simple dish that you could cook in 30 minutes.. Cajun Prawn Linguinne and Kimchi Fried Rice.. It's super easy, even my dearest Mr could cook it without my help.. So here are the recipes..

Cajun Prawn Linguinne:



Ingredients:
* a handful of linguinne
* prawns, de-shell
* cajun seasoning
* cayenne pepper
* 2-3 clove garlic, diced
* 1/2 green capsicum, sliced
* 1/2 red capsicum, sliced
* salt
* parmesan cheese, grated

Methods:
1. Put a pot of water to near boil, add in a tablespoon of salt and boil the linguinne to al dante (it would take about 10-15 mins) ** never add in oil while boiling pasta
2. Once pasta is cook, drain the water and set aside.
3. Heat oil in wok/big sauteed pan on low heat. Add in garlic. Once garlic is slightly brown, add in prawns and capsicums.
4. Try not to overcook the prawns. Stir for about 5 mins, and add in salt, cajun seasoning, cayenne pepper (i'm crazy about spicy, i'll usually put abt 1 flat tb. spoon of cajun seasoning and cayenne pepper).
5. Stir well and add in the linguinne. Stir for the next 5-10 mins and ready to serve.


Kimchi Fried Rice:



Ingredients:
* 2 scoops of cooled rice (best to use previous day rice)
* 1 1/2 tablespoon of chilli paste (you could use chilli boh)
* 2-3 clove of garlic, chopped
* 1 white onion, diced
* small packet of kimchi
* minced chicken meat OR chicken breast, sliced
* sesame oil
* salt

Methods:
1. Heat oil in a wok, add in onion and garlic. Stir for about 3 mins and add in chilli paste. Cook chilli till it turn dark (aprox. 8 mins) add in the preffered meat.
2. Add salt and kimchi once meat is cooked. Stir for about 5 mins and add in rice.
3. Stir till the ingredients are mixed well.
4. Add in 1 1/2 tablespoon of sesame oil. Stir for 2 minutes and its ready to serve!
