THE - Happy Pan

Apart from the occasional request for a bling bling earrings, i had asked for a pan.. Yes i asked my hubs to gimme a pan as a random present.. Who asked their husband for a pan?? I did!! =)

So he surprised me at work by sending a picture for a pan which i had asked a long time ago... THE HAPPY CALL!!! He had ordered it and it was delivered at home..



I got insanely excited at work.. I couldn't work and i was eager to go home and whip something instantly.. =) Here is my first dish from Happy Call..

Cajun Chicken:



Ingredients:
* Chicken Breast
* Cajun Seasoning
* Pepper
* A dash of Cayenne pepper

Methods:
1. Wash the chicken breast & pat dry with paper towel.
2. Season with pepper, cajun seasoning & a dash of cayenne pepper.
3. Heat up the happy call with abt 1 tbsp olive oil and cook the chicken for at 10 mins or till chicken is properly cooked.

PS: Serve it with steamed veggie..

THE - Healthier meatier supper!

Hubs & I gets easily hungry near midnite.. We used to order delivery for McD for late night supper.. BUT, eversince the delivery charges went up to 4 bucks, we had to get a restraining order.. We could get 2 double cheese burger for that price lah!

So, i stumbled across a kinda healthier supper alternative.. Having supper is still sinful lah! Its easy to prepare and easy to cook!

Baked Garlic Parmesan Cheese:



Ingredients:
* 4 Chicken Breast
Bowl A
* Olive oil
* 4 cloves garlic, crushed
Bowl B
* 2 cups breadcrumbs
* a sprinkle of dried thyme (optional)
* 1/2 cup of parmesan cheese (if you like it cheesier, do add more)
* Cajun Seasoning (for flavour)

Methods:
1. Preheat oven at 170 deg. C
2. Dip the chicken breast on Bowl A. Then dip it in Bowl B, making sure it is covered well in the breadcrumbs mixture.
3. Lay it on a lightly grease baking tray. (Not too much oil on the baking tray, otherwise the crumbs would be soggy..
4. Baked it in the preheated oven for 15 mins or till the crumbs turns golden brown.

THE - Jiffy Meals..

I've been absent for darn too long.. Apart from a husband to keep me busy, my little man gave me extra homework everyday, hence the long silence from uploading cooked food..

Being a new mummy is super challenging.. No, i'm not complaining, just loving the new title "MUMMY".. It took me a super long time after giving birth to actually start cooking.. My handsome little man is now 6 months and 14 days old..



He's crawling all over the place and learning to climb.. and his first tooth is spruting out!!! =)))

Enuff said about my handsome little man.. The thought of cooking, after coming home from work and then taking care of an infant, can be really REALLY tiring.. Hence i came up, or should i say stumble and then improvised, with 2 super simple dish that you could cook in 30 minutes.. Cajun Prawn Linguinne and Kimchi Fried Rice.. It's super easy, even my dearest Mr could cook it without my help.. So here are the recipes..

Cajun Prawn Linguinne:



Ingredients:
* a handful of linguinne
* prawns, de-shell
* cajun seasoning
* cayenne pepper
* 2-3 clove garlic, diced
* 1/2 green capsicum, sliced
* 1/2 red capsicum, sliced
* salt
* parmesan cheese, grated

Methods:
1. Put a pot of water to near boil, add in a tablespoon of salt and boil the linguinne to al dante (it would take about 10-15 mins) ** never add in oil while boiling pasta
2. Once pasta is cook, drain the water and set aside.
3. Heat oil in wok/big sauteed pan on low heat. Add in garlic. Once garlic is slightly brown, add in prawns and capsicums.
4. Try not to overcook the prawns. Stir for about 5 mins, and add in salt, cajun seasoning, cayenne pepper (i'm crazy about spicy, i'll usually put abt 1 flat tb. spoon of cajun seasoning and cayenne pepper).
5. Stir well and add in the linguinne. Stir for the next 5-10 mins and ready to serve.


Kimchi Fried Rice:



Ingredients:
* 2 scoops of cooled rice (best to use previous day rice)
* 1 1/2 tablespoon of chilli paste (you could use chilli boh)
* 2-3 clove of garlic, chopped
* 1 white onion, diced
* small packet of kimchi
* minced chicken meat OR chicken breast, sliced
* sesame oil
* salt

Methods:
1. Heat oil in a wok, add in onion and garlic. Stir for about 3 mins and add in chilli paste. Cook chilli till it turn dark (aprox. 8 mins) add in the preffered meat.
2. Add salt and kimchi once meat is cooked. Stir for about 5 mins and add in rice.
3. Stir till the ingredients are mixed well.
4. Add in 1 1/2 tablespoon of sesame oil. Stir for 2 minutes and its ready to serve!

THE - Mamak meet Ang Moh!

Today was my appointment at KK.. Had 1/2, no dearest hubby had corrected pfft, 3/4 boiled egg before leaving home.. Lunch was at JB.. Run some errands and then proceed to Beach Road Food Centre for 'Sup Tulang'.. I had forgotten which foodstall number, but the meat are seriously tender.. YUMMY!



Dessert was at 'Strictly Pancakes' at Prinsep Street.. Had the Apple Cinnamon.. Many thumbs up! Seriously delish! Compared to the other pancakes that has got the vanilla sauce topping, mine was perfect.. Not too sweet as i don't have a sweet tooth..






Strawberry & Co. : 3 stacks of pancaked, with vanilla sauce, mixed berries & strawberry at the side & vanilla ice-cream.
Apple & Cinnamon: 3 stacks of pancakes, with caramelised apple topping, dash of cinnamon sauce & Vanilla ice-cream.
What a spread! : 3 stacks of peanut butter pancakes put together with nutella spread in between those stacks, topped with vanilla sauce, 2 kinder buenos & vanilla ice-cream.
Totally bloated!

THE - Sambal Affair

Saturday's lunch.. To me it was worth the carpark summon, the sore feet & the 3 different market visit, all for my 'Sambal Kupang/Mussels'.. I had concluded today, Mussel wasn't in season (like DUH! after 3 different market visits).. Managed to get 2 kilos of fresh mussels, had initially wanting to get those pre-packed without the shell..

Anyhoots, lunch for dear hubby was cooked by moi, yes moi alone and i'm proud of it! My MIL had cooked a different dish for my FIL which wasn't my hubby's fave, fish.. Today's menu was Sambal Kupang/Mussels, fried veggie & fried chicken..

This sambal, was a recipe from my mum. Sambal tumis is a very basic sambal, which you could add on different ingredients. Prawns, mussels, fried anchovies or even fried eggs. You could have them with Nasi Lemak, Nasi Goreng or even White Rice.
- If you are using the fresh mussels (bought with the shell), wash thoroughly then steam it till the shell open up.
- But if you bought those which the shell was removed, fry it for about 5 minutes. So that the mussels last longer.
- Same goes with prawns, fry them so that it could last longer.



Sambal Tumis:

Ingredients:
* 3 cups of oil
* 2 handful of dried chili - Boiled then blended
* 4 onions
* 5 cloves of garlic
[Onion & garlic are to be blended together using the blender from the chili]
* 1 cup of tamrind water
* 1 tbsp of salt
* 2 1/2 handful of sugar

Method:
1. Heat up the oil in the wok. Then add in the blended chili.
2. Chili should be cooked till dry. Make sure to stir regularly so that it doesn't get burnt.
3. Once chili is dry, color should be of dark red (not burnt), add in the blended onion & garlic.
4. Stir well. Once the mixture is a lil dry, add in about 1 1/2 cups of water.
5. Aprox. 10 minutes later, add in the tamarind water and stir well.
6. Add in the salt and sugar. Taste it, add more to your preferred taste. Leave if for a few minutes.

The above recipe cook about 1 big bowl of Sambal. To have your preferred Sambal variation, you could scoop out half of the portion in the wok to be cool and store it in the fridge. The other half portion in the wok, add in the steamed/fried mussles OR prawns OR fried anchovies OR fried eggs. Leave it for a few minutes. Then, its ready to be served!



Fried Veggie:

Ingredients:
* 2 tbsp of olive oil
* 1 onion - sliced
* 2 cloves garlic - chopped
* 1-2 red chili - sliced
* 10-12 French beans - cut abt 2cm long
* 1 Carrot - sliced thinly
* Cabbage - sliced
* 1/2 cube of Chicken Know stock

Methods:
1. Once oil is heated, fry onion, garlic & red chili.
2. Next add in the cube stock and then the rest of the ingredients.
3. Stir well and add in about 1/3 cup of water. Leave it for about 5 minutes and.. ready to be served.

THE - Upset Bruschetta

I had dinner last night at Pizza Hut, Suntec City outlet, with both my sisters.. I can't remember when was the last time i'd dine-in at Pizza Hut (i'd still prefer Canadian Pizza btw).. So they had changed their menu.. They have some new dishes and the Mushroom Bruschetta caught my eye.. Bruschetta usually have tomatoes so when i saw mushroom, i quickly snap a photo from the menu and sent it to dear hubby.. he replied with a beaming face (meaning ok! he wants that).. i ordered 1 for dine-in.. and to my disappointment, it was way way WAY so different.. Be the judge..

THE - Gluttons Affair!

Okay! so dearest hubby was happy at the end of yester-night.. New crocs slippers (checked!).. Dinner (checked!):

Dinner was at Earl's Swensen @ Vivo City.. There were 4 of us.. And everything, except for "Surf & Turf", is actually serving for 2.. We were damn hungry..

Dessert (checked!).. Dinner was Fruit Tart.. They were just too pretty that we had to buy them.. And i just have to leave my phone in the car and my dear hubby took a picture that is not appealing, no matter how i try to edit it, its seriously not appealing.. So i promise to upload the pics when i visit the store again.. Aite?

TONITE'S DINNER:

Dear husband's is always picky with his food.. so tonite, he had requested for Fried Kway Teow Cockles.. Right after work, i had to rush to Shin Sheong to buy the ingredients and cook his dinner...

Kway Teow Cockles..

Ingredients:
- Noodle & soya sauce are to be mixed and set aside
* 500gm Kway teow noodle
* 1 tbsp dark soya sauce (thick)

- Blend these 3 ingredients together
* Dried chili - soaked with hot water
* 1 big onion
* 3 cloves garlic

* Raw cockles meat
* 2 tbsp sugar
* 1 flat tbsp salt
* 1 egg
* Bean sprout

Method:
1. Heat oil and put in the blended ingredients. Stir well for about 5 minutes and add in the cockles.
2. Cockles has to be cooked properly or if the blended ingredients are too dry, add in a little water. Stir for another 5-7 minutes,
3.  Add in sugar & salt. Stir well and add in egg.
4. Add in noodles and stir well.
(After this, i'll usually do my tasting.. If it is in need of more sugar, i'll usually add in sweet soya sauce)
5. Once satisfied with the taste, add in the bean sprout. (i love my bean sprout to be crunchy, that is the reason why i add it in last)
6. Stir it a few times. Ready to serve.
